D\u2019ailleurs, depuis 2019, la cuisine ni\u00e7oise est inscrite au <strong>patrimoine immat\u00e9riel de l\u2019Unesco<\/strong>. <\/p>\n<p class=\"wp-block-paragraph\">Si par certains c\u00f4t\u00e9s, on peut y trouver parfois quelques points communs, il ne faut pas la confondre avec la gastronomie italienne dont elle est bien diff\u00e9rente. Oui, nous aimons beaucoup les anchois dans la cuisine ni\u00e7oise !<\/p>\n<p class=\"wp-block-paragraph\">La pissaladi\u00e8re c\u2019est un peu notre part de pizza, ou notre part de quiche \u00e0 nous. Cela se mange bien souvent en ap\u00e9ro ou en entr\u00e9e et se partage avec les copains. Parfois, sur le pouce \u00e9galement pour un d\u00e9jeuner rapide. <\/p>\n<p class=\"wp-block-paragraph\">Ce n\u2019est, par contre, pas un plat \u00e0 part enti\u00e8re. <\/p>\n<p class=\"wp-block-paragraph\">En cas de petit creux et envie de sal\u00e9, c\u2019est une bonne id\u00e9e que de la go\u00fbter, d\u2019autant qu\u2019elle n\u2019est pas difficile \u00e0 trouver : la majorit\u00e9 des boulangeries en proposent. <\/p>\n<h3 class=\"wp-block-heading\">Le pan bagnat<\/h3>\n<figure class=\"wp-block-image size-large\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" width=\"640\" height=\"853\" src=\"https:\/\/i0.wp.com\/volare.volotea.com\/wp-content\/uploads\/2023\/02\/image00001.jpg?resize=640%2C853&#038;ssl=1\" alt=\"pan bagnat niza\" class=\"wp-image-21112\" srcset=\"https:\/\/i0.wp.com\/volare.volotea.com\/wp-content\/uploads\/2023\/02\/image00001.jpg?resize=768%2C1024&amp;ssl=1 768w, https:\/\/i0.wp.com\/volare.volotea.com\/wp-content\/uploads\/2023\/02\/image00001.jpg?resize=225%2C300&amp;ssl=1 225w, https:\/\/i0.wp.com\/volare.volotea.com\/wp-content\/uploads\/2023\/02\/image00001.jpg?w=960&amp;ssl=1 960w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/figure>\n<p class=\"wp-block-paragraph\">Si vous venez \u00e0 Nice et que vous souhaitez manger un sandwich, vous devez absolument go\u00fbter le pan Bagnat. Il s\u2019agit d\u2019un sandwich \u00e0 base de pain, d\u2019huile d\u2019olive (litt\u00e9ralement pan bagnat voulant pain baign\u00e9), de l\u00e9gumes, de thon, d&rsquo;\u0153uf dur et d\u2019anchois. <\/p>\n<p class=\"wp-block-paragraph\">Si je dois manger rapidement sur le pouce, c\u2019est clairement le sandwich que je choisis. <\/p>\n<p class=\"wp-block-paragraph\">D\u2019ailleurs, je ne peux que vous conseiller de le d\u00e9guster sur la plage au bord de la M\u00e9diterran\u00e9e. A base de farine de pois chiches, cette grosse galette fine cuite ensuite au four (\u00e0 bois de pr\u00e9f\u00e9rence) se d\u00e9guste par petites portions \u00e0 la main et sans faim. J\u2019adore \u00e7a !<\/p>\n<h3 class=\"wp-block-heading\">La daube ni\u00e7oise (accompagn\u00e9e de gnocchis ou raviolis)<\/h3>\n<p class=\"wp-block-paragraph\">Il s\u2019agit de b\u0153uf brais\u00e9 mijot\u00e9 avec du vin rouge et servi le plus souvent avec des gnocchis de pommes de terre ou des raviolis. C\u2019est le plat chaud le plus embl\u00e9matique de la cuisine ni\u00e7oise. <\/p>\n<h3 class=\"wp-block-heading\">Les petits farcis ni\u00e7ois<\/h3>\n<p class=\"wp-block-paragraph\">Comme le nom l\u2019indique, il s\u2019agit de l\u00e9gumes du sud (tomates, courgettes, poivrons, aubergines, et oignons principalement) qui sont farcis. Si les deux sont tr\u00e8s bonnes, ma pr\u00e9f\u00e9rence va  clairement \u00e0 la tourte de blettes sucr\u00e9e. C&rsquo;est d\u2019ailleurs un de mes desserts pr\u00e9f\u00e9r\u00e9s. Pourtant, le ni\u00e7ois vous dira souvent que celles que l\u2019on trouve hors de la r\u00e9gion n\u2019ont bien souvent h\u00e9las rien d\u2019une vraie salade ni\u00e7oise. <\/p>\n<p class=\"wp-block-paragraph\">La liste des ingr\u00e9dients est bien pr\u00e9cise et il n\u2019est pas question de commettre un impair ! Pour faire une bonne salade ni\u00e7oise, vous avez besoin de tomates, de poivrons verts, d\u2019ail, de c\u00e9bettes, de f\u00e9vettes, de c\u00e9leri, d\u2019oeufs durs, de filets d\u2019anchois, de thon, d\u2019olives noires ni\u00e7oises, le tout arros\u00e9 d\u2019huile d\u2019olive. <\/p>\n<p class=\"wp-block-paragraph\">Si vous y voyez des pommes de terre ou pire, des haricots verts, passez votre chemin !<\/p>\n<h2 class=\"wp-block-heading\">La label cuisine nissarde<\/h2>\n<p class=\"wp-block-paragraph\">Depuis plusieurs ann\u00e9es maintenant, la ville de Nice a cr\u00e9\u00e9 le label \u00ab cuisine nissarde \u00bb.  Il s\u2019agit d\u2019un label qui est attribu\u00e9 aux restaurants de la r\u00e9gion venant reconna\u00eetre le respect des traditions de la cuisine ni\u00e7oise. <\/p>\n<p class=\"wp-block-paragraph\">Ce label est attribu\u00e9 (parfois retir\u00e9 aussi) chaque ann\u00e9e et si vous le voyez \u00e0 l\u2019entr\u00e9e d\u2019un restaurant alors c\u2019est un endroit o\u00f9 vous pourrez go\u00fbter la majorit\u00e9 des sp\u00e9cialit\u00e9s dans le respect des m\u00e9thodes de fabrication et des recettes. Nul besoin donc d\u2019un grand restaurant pour tester cette gastronomie qui se veut avant tout populaire et familiale. <\/p>\n<p class=\"wp-block-paragraph\">Voici quelques-unes de mes recommandations et bonnes adresses : <\/p>\n<ul class=\"wp-block-list\">\n<li>Allez d\u00e9guster une part de socca chez <strong>Socca tram<\/strong>, la <strong>socca du cours<\/strong>, <a href=\"https:\/\/www.chezpipo.fr\/\" target=\"_blank\" rel=\"noreferrer noopener\">Chez Pipo<\/a> ou encore chez <strong>le Roi de la socca<\/strong> pr\u00e8s du port.<\/li>\n<li>Allez vous r\u00e9galer avec une bonne daube <strong>chez Acciardo<\/strong> ou <a href=\"http:\/\/chezcane.com\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>chez Can\u00e9<\/strong><\/a><\/li>\n<li>Testez la tourte de blettes sucr\u00e9e de la boulangerie \u00ab <strong>Au bon Pain<\/strong> \u00bb &#8211; Rue Saint Philippe<\/li>\n<li>Allez acheter des raviolis ou des gnocchis \u00e0 la <a href=\"https:\/\/www.maison-barale.fr\/\" target=\"_blank\" rel=\"noreferrer noopener\">maison Barale<\/a>, une institution dans le Vieux Nice. <\/li>\n<li> N\u2019h\u00e9sitez pas \u00e0 demander \u00e0 un ni\u00e7ois dans la rue o\u00f9 il ach\u00e8te son pan bagnat quand il veut d\u00e9jeuner rapidement. <\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\">Dans tous les cas, ne partez surtout pas de Nice sans avoir go\u00fbt\u00e9 \u00e0 sa cuisine, ce serait vraiment dommage !<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Nice est connue dans le monde entier pour sa baie des anges, ses fa\u00e7ades color\u00e9es, sa vieille ville, son soleil, ses palmiers et ses galets.
